Some local farms offer guided tours with tastings, where you can watch buffalo milk being processed and taste it while it’s still warm. The authentic curly “sfogliatella”, with its thin flaky pastry and a filling of ricotta and semolina that’s still warm, can be found in the traditional patisseries of Naples and Caserta. Early in the morning, with an espresso. Do not replace it with an airport version.
